University of Detroit Mercy Titan Hall
studiozONE, llc was selected by the University of Detroit Mercy transform the existing Titan Dining Hall in the Student Union Building at the center of campus. A number of small changes to the original space had been done over the years but the space was showing its age. Additionally, a great deal of space within the kitchen area was underutilized and inefficient. The university Facility Services Department decided major changes needed to be made to attract future students to the univesity.
Working with the Titan Hall's food service company, Sodexo, a decision was made to remove a large portion of the kitchen "back-of-house" functions in the kitchen area and to bring the kitchen out into the dining area. Individual "kitchen stations" were placed throughout the dining area, each with a theme, "Entrees", "Salad Bar & Desserts", "Pizza/Pasta", "Grille" and "Deli".
The challenge in the design phase was to create an updated interior; attractive to the users while being able to function properly for the kitchen staff. Working with Atlantic Restaurant Equipment, we were able to locate the "kitchen stations" which would function for Sodexo while minimizing the impact to the existing building's mechanical, electrical and plumbing systems. With the tight budget for the project, the design had to prioritize the design elements.
